Modified French Dip made with back straps!! So fu***ng good! Prep back straps, season heavily with course salt and peppercorn. One packet of powdered Auju makes 3 cups. First sautee' onion sliced into pedals with virgin olive oil, butter, salt and pepper. Add that to your auju mix with a spoon full of horse radish after slightly browned. Take fresh Italian or French bread and make garlic bread - slice loaves and split, melt butter and brush on heavily, add garlic powder, garlic salt, Italian seasoning, and top with shredded fresh mozzarella. Bake until just crispy. Meanwhile, sear - get the pan hot!!! - your back straps until evenly chared without cooking all the way through - pull off pan and let rest. Slice back straps thin, and I put them in a small baking dish with some hot auju. Layer your victorious meat on the split garlic bread, add a heaping amount of more mozzarella cheese, set some bowls up for your bangin' auju and serve. Dip deep, get messy and enjoy!!
