Hot seafood + cold compound butter coins = instant sauce (and a restaurant-level finish in seconds).

Here’s the trick: mix softened butter (not melted) with lime zest + your flavor, roll into a tight log, chill, then slice “coins” with a warm, thin knife. Drop 1–2 coins on hot shrimp/scallops/fish and let it melt into the juices… glossy, bright, and easy.

Two go-to combos:
- Garlic–Lime: microplaned garlic + lime zest + salt (+ parsley/cilantro if you like). Add fresh lime juice at the end.
- Chili–Lime: lime zest + chili flakes/gochugaru + salt (optional tiny touch of honey for balance). Finish with a squeeze of lime.

Wow! What a cool drone light show tonight in Apalachicola! ✨🚁
One of the many things our guests love about staying at the resort is being close to so many great events and attractions along the Forgotten Coast. Whether it's local festivals, live music, unique shows, or simply enjoying the beautiful scenery, there's always something worth exploring.
A big thank you to everyone who helped organize and put on tonight's show. It was an amazing experience and a great reminder of why we love this area so much!

Bug season + coastal air can turn your grille into a “radiator blanket.” Do you clean your tow vehicle’s radiator/A/C condenser fins after bug-heavy drives?

Why it matters (especially when towing): packed fins can block airflow, make A/C blow warmer at low speeds, and nudge engine/trans temps higher on pulls—salt + bug residue can also trap moisture and speed corrosion.

Quick, safe clean checklist:
- Let everything cool completely
- Use low pressure (garden hose/shower nozzle, not a close-up pressure washer)
- Pre-soak with a condenser/radiator-safe foam cleaner, then rinse
- If you can access it, rinse from the engine side outward to push debris back out
- Skip stiff brushes—those fins bend easily

Before the highways, one railroad helped stitch the Forgotten Coast together.

In the early 1900s, the Apalachicola Northern Railroad (ANRR) was created to give this stretch of the Florida Panhandle a direct rail outlet to the Gulf. Its main line ran from Chattahoochee down to the coast—and over time, Port St. Joe became a key Gulf terminal with connections into Apalachicola.

Why it mattered: it turned two very different waterfront towns into part of the same working corridor. Apalachicola’s river-and-bay commerce (seafood, oysters, timber and more) could move inland faster, and Port St. Joe’s industrial side could ship forest products out while bringing bulk supplies in. For decades, log trains and pulpwood cars feeding the big mill era helped shape the rhythm of everyday life here—alongside shrimp boats, docks, and small-town storefronts.

That’s the part we love most: today it’s quiet, scenic, and unhurried—but the stories underneath the surface are still everywhere.

We have so much fun here at the resort that even the wildlife wants to join in on the activities! 🦀☀️
I scooped this little crab out of the pool this morning, and after making sure everything was okay, we safely released it back where it belongs. Must have been happy because I got a little wave as I left it on the sand. Being right next to the beach, you truly never know what you might see around here!

Today, we honor and remember the brave men and women who made the ultimate sacrifice for our country and our freedom. ❤️🤍💙

One of our favorite sights around the resort is this beautiful bald eagle that often flies overhead. 🦅✨ Even though they didn’t make an appearance today, it’s always an incredible reminder of the beauty and freedom we’re lucky to enjoy here.
