Our National award winning summer recreation program includes, ice cream socials, and live entertainment featuring hula hoop and limbo contests, and not to mention all of our dances, including, chicken dance, macarena, superman, cha cha slide, electric slide, hokey pokey and so many more. Mendocino Redwoods aims to provide a fantastic experience for the whole family and ensuring that the whole family leaves with lasting memories. No problem. 🎉 Labor Day Weekend was a SUCCESS! 🇺🇸❤️

We had so many families choose to stay an extra night and enjoy everything the resort has to offer! From the amenities to making memories together, it was the perfect way to wrap up summer. 🌲🏕️

🌺🔥 CAMPFIRE RECIPE IDEA: Hawaiian Chicken Foil Packets! 🍍🍗

Looking for an easy, delicious dinner to make while camping? This one is a winner! 🙌🏽

🍍 Hawaiian Chicken Foil Packets 🍍

What you’ll need:
🍗 Diced chicken thighs
🍍 Pineapple chunks — fresh or canned
🫑 Diced red pepper
🥢 Teriyaki sauce
🌰 A little sesame oil
🧂 Salt
🍚 Cooked rice, prepared at home and packed separately

How to make it:
1️⃣ Place the chicken, pineapple, red pepper, teriyaki sauce, sesame oil and a little salt onto heavy-duty foil. Double-wrap your packet for extra protection.

2️⃣ Place the packet over hot coals, not directly in roaring flames. Cook for about 20 minutes, flipping once halfway through, until the chicken is fully cooked.

3️⃣ While your chicken cooks, you can warm your pre-cooked rice in its own foil packet on the coals for about 5 minutes—or simply serve it at room temperature.

✨ The best part? The pineapple juice combines with the teriyaki sauce while cooking to create a delicious sweet-and-savory sauce. Spoon that goodness right over your rice! 🍚 🍍

💡 Campground tip: If using canned pineapple, drain it first so your foil packet doesn’t become too watery.

🌿🍅 Employee Shoutout: Heidi! 🍅🌿

We want to give a BIG shoutout to one of our amazing team members, Heidi! 🥳💚

Heidi planted tomato plants and succulents in all of our camping cabin planters, and they are absolutely thriving! 🌱🍅🌵 Our team makes sure to keep the plants around the park watered, cared for, and looking their best—and we’re loving the beautiful little touches of greenery throughout the resort!🪴

And we have one more reason to celebrate… it was Heidi’s birthday yesterday, 9/1! 🎂🎉 Happy Birthday, Heidi! We hope you had an amazing day! 🥳💐

Heidi is also one of the wonderful team members who helps keep our cabins and bathrooms clean, fresh, and sparkling for our guests. ✨🧼🧹

🎣 Have you explored our catch-and-release fishing pond? 🌲🐟

Did you know there are two ways to get there?

🌉 Option 1: Take the little bridge next to Tent Site 59. It’s a peaceful shortcut that leads you right toward the pond! 🎣

🚶 Option 2: From the entrance, stay straight on the main road. You’ll pass the bridge near Cabin 1, and just after that, you’ll see the gate on your right-hand side. From there, it’s just a short walk to the pond!🚶

With rain on the way, we’ll soon be getting more water and stocking more fish! 🎣🌧️ Bring your fishing gear and come try your luck! 🍀🐟
