Football season is here, and that means the cooking changes.

Tailgate and game-day cooking is its own discipline. You are feeding a crowd, you are working with limited space, and everything needs to hold well because nobody eats on schedule.

What works: wings in bulk, a big pot of chili in a Lodge dutch oven, smash burgers on a griddle, pulled pork you cooked the day before and hold in a cooler, and sausages that stay good sitting on the cool side of a Weber for an hour.

Wings deserve their own note. Dry-rub them with Meat Church Garlic Jalapeno Blanco, smoke them at 375 until crisp, and sauce half of them with a creamy jalapeno sauce (message us for the recipe) at the end so you cover both camps.

One week from today is your last service day before Labor Day weekend.

Our techs are in the bays or on the roads Monday through Friday, 9AM–5PM. That means Friday, September 4th is the final day work gets done before the holiday weekend. We are open Saturday September 5th 9AM–NOON, but that is parts and retail only — no service, no tech work.

Malcolm Reed and Killer Hogs — how BBQ Rub earned its reputation.

Malcolm has been competing and teaching for years, and the thing about the Killer Hogs line is that it is not designed for a photo. It is designed to win. Every one of those products came out of a competition trailer.

The BBQ Rub is the flagship — sweet, savory, paprika-forward, and it sets color like almost nothing else. The Hot Rub adds cayenne heat without losing the balance. The AP Rub is a foundational layer you put down first, under everything else, and it is the secret step a lot of home cooks are missing.

Your roof vents and fans have been running hard all summer. Let's look at them before fall.

Vent lids crack. UV makes the plastic brittle, hail finishes the job, and a lot of owners do not find out until water is coming through. Fan motors — Fan-Tastic, MaxxAir, whatever you have got — wear out, and they usually announce it by getting loud or slow before they quit entirely.

The gaskets around the vent flanges are just as important. That is a big opening in your roof, and the seal around it takes the same UV and heat cycling as everything else up there.

Vent covers are worth a mention too. They let you run vents in the rain, which matters a lot for moisture control heading into fall.

We stock the parts and our techs can install them Monday through Friday, 9AM–5PM.

It is National Dog Day, and if you camp, your dog camps.

So let's talk about the one that keeps RV owners up at night: what happens to your dog if the AC or the power goes out while you are away from the rig?

An RV heats up fast. Faster than a house. If a breaker trips, a shore power pedestal fails, or the AC quits while you are on a hike, the interior temperature can climb to dangerous levels in under an hour.

A few things that matter: make sure your AC is running at full capacity and not limping, make sure your generator will actually start and carry the load, make sure your battery and converter are healthy, and consider a temperature monitor that alerts your phone.

We can check the AC, the generator, the converter and the 12-volt system. That is a good afternoon's work and it is genuinely a safety issue.

TACO TUESDAY.

This week: carnitas. And you can do it entirely outside in a Lodge dutch oven.

Cube a pork shoulder, season it heavy with Meat Church Fajita or Holy Voodoo, and put it in the dutch oven with a little lard or oil, a quartered orange, half an onion and a few cloves of garlic. Lid on, low fire or 300 degrees, and let it go two to three hours until it shreds with no effort.

Then here is the step people skip: pull the lid, crank the heat, and let the outside of the pork crisp up in its own rendered fat. That contrast — soft inside, crispy edges, perfection.

Corn tortillas, white onion, cilantro, lime. Nothing else needed.

Lodge dutch ovens are in stock, and they are the most useful piece of camp cooking equipment you can own.

The National Park Service turns 110 years old today.

We live 20 minutes from the most visited national park in the United States. Great Smoky Mountains National Park brings millions of people through here every year, and a whole lot of them come in an RV.

That park is the reason a lot of you found this area. It is the reason a lot of you bought the rig in the first place. And it is about to be at its absolute best — six weeks from now the color comes through those mountains and there is nothing else like it anywhere.

Fall in the Smokies means mountain grades, cool nights and long drives. It means your brakes, your bearings and your furnace need to be right.

It is National Waffle Day, which gives us an excuse to say something we believe strongly: your griddle is underused.

Most people buy a flat top or a cast iron griddle for burgers and then never take it past that. Meanwhile it is the single most versatile cooking surface you own.

Smash burgers, obviously — and the smash burger only works on a flat surface, because you need full contact to build that lacy crust.

But also: cheesesteaks, quesadillas, fried rice, hibachi vegetables, grilled cheese, pancakes, hash browns, seared scallops, blackened fish, breakfast for a whole campground.

Lodge cast iron griddles work over a campfire, on a grill, or on a burner. Weber Slate portables work everywhere. Both are on our shelves.

Labor Day weekend is two weeks out. Read that again.

September 5th, 6th and 7th is the last big camping weekend of the summer, and in this part of the country it is enormous. Campgrounds across the Smokies book solid. Highway 74 fills up. Everybody who has been meaning to get one more trip in this year takes it that weekend.

Which means our service schedule between now and Friday, September 4th is going to fill up fast — and September 4th is the last day our techs are in the bays before that weekend.

If your RV needs anything at all — AC, furnace, water heater, brakes and bearings, roof and seals, electrical, LP, slide-outs, awning — this is the week to call. Not the week of. Not that Thursday.
