Meet Randall’s Roadside Kitchen: A New Flavor at Nelson’s
We’re excited to introduce a new addition to the Nelson’s community — Randall’s Roadside Kitchen, a BBQ food truck bringing great food, experience, and a little Southern flavor to the roadside.
Behind the truck is Randall, a longtime Floridian with roots in Charleston, West Virginia. Randall is originally from Charleston, a city known for its rich Southern and Lowcountry food traditions. But Florida has been home for most of his life — he moved here when he was just four years old and has called the Sunshine State home ever since.
Over the years, Randall found his way into the restaurant business, following in his father's footsteps, building the experience and knowledge that would eventually lead him to start his own food truck.
But getting there wasn’t exactly the plan.
After spending years in the restaurant business, Randall began to feel burned out. He thought he was simply tired of the restaurant industry and was ready for something different.
Then he realized something important.
It wasn’t cooking that he was tired of. It wasn’t the customers. It wasn’t even the restaurant business itself.
He was tired of the corporate side of the business.
That realization changed everything.
Instead of walking away from the food business altogether, Randall decided to take what he had learned and build something of his own. That idea became Randall’s Roadside Kitchen.
The food truck allows Ernest to get back to what he enjoys — cooking good food, serving people, and creating a more personal experience without all the corporate layers that had left him feeling burned out.
