Long before Galveston became famous for its beaches and historic architecture, one of its most remarkable residents changed the way the world drank milk. Gail Borden Jr. arrived in Texas in 1829 and helped shape the young city by surveying its streets, serving as Galveston’s first customs collector, publishing one of the Republic of Texas’ earliest newspapers, and mapping the surrounding region. But his greatest contribution came after witnessing children become dangerously ill from spoiled milk during a sea voyage. Determined to find a safer solution, Borden developed a revolutionary vacuum process that created shelf-stable condensed milk, earning a patent in the 1850s. His Eagle Brand Condensed Milk would go on to feed soldiers during the Civil War, nourish families around the globe, and forever change the dairy industry. It’s one more reminder that some of Texas’ greatest stories aren’t just about cattle drives and oil booms they’re about ordinary people whose extraordinary ideas changed the world.

Goodmorning Texas! June 26th is here, and the weather is once again asking every Texan to prove they can look normal while quietly melting. North Texas starts a little cloudy, then turns bright and hot enough by afternoon to make the grocery store parking lot feel like a test of character. East Texas will be warm and muggy, with the pine trees standing there looking innocent while the air acts like soup with mosquitoes. Central Texas and the Hill Country will heat up into the upper 90s, so the best outdoor plan is the one that includes air conditioning nearby. South Texas and the Gulf Coast will stay sticky, breezy, and warm, which is nice if you enjoy humidity with a travel schedule. West Texas will be cooking again, with El Paso and Lubbock pushing into the 100s like somebody dared them. The Panhandle may keep things a little less awful early, but storms could show up later just to add some evening drama. By sunset, it settles down enough for grilling, porch sitting, and pretending that standing directly under a ceiling fan counts as self-care.
