Chef Patty walks us through her Roasted Cauliflower Salad — golden florets straight from the oven, tossed with fresh herbs, a touch of cumin, pomegranate seeds, and toasted pistachios. Bright, bold, and surprisingly simple.

Recipe:

CAULIFLOWER
• 1 large cauliflower, florets separated and a portion grated
• Kosher salt & black pepper
• Extra-virgin olive oil
• 1 small onion, roughly sliced

SALAD
• 1¼ cups fresh parsley, roughly chopped
• ½ cup fresh mint, roughly chopped
• ½ cup fresh tarragon, roughly chopped
• Seeds from ½ medium pomegranate
• ⅓ cup shelled pistachios, lightly toasted and roughly chopped
• 1 tsp ground cumin
• 1½ tbsp fresh lemon juice
• Kosher salt & black pepper

They say passion is born in the subconscious, that it is the first impulse that reaches the brain before reason has a chance to intervene. Nikol García and Jovani Rivera, students at the Miami Culinary Institute, know that impulse very well.

A space to be creative, a reason to bring people together, and a source of endless surprise. That is how Nikol captures her passion for cooking and her purpose within the culinary world.

Chef Roudeline love for food was rooted in the kitchens of her native Haiti, where meals were a means of bringing people together.

After relocating to Miami in 2010, she pursued her passion at the Miami Culinary Institute where she now proudly serves, inspiring the next generation.

Her career spans over a decade across the culinary and hospitality industry, including high-volume kitchens, private dining, and corporate events, with work alongside notable chefs and clients.

As an instructor, she is committed to cultivating confidence, discipline, and culinary excellence in her students, creating an environment where they can grow both technically and professionally.

Beyond the kitchen, she is passionate about community outreach and the belief that food has the power to bring healing, connection, and joy.
