Have redfish in the freezer and tired of the traditional methods like on the half shell or blackened? I have a recipe for you that will please even the pickiest of eaters. This is a quick and low effort recipe that makes for a perfect weeknight dinner.

Crispy Redfish Marinara

Serves 2

Ingredients

Redfish

* Fillets from 1 redfish, deboned with bloodlines removed
* Cut into similar-sized steaks and patted completely dry
* Salt, to taste
* Black pepper, to taste
* Garlic powder, to taste

Breading

* 1 egg
* ⅓ cup cold water
* 1 cup all-purpose flour
* 1 cup Japanese-style bread crumbs
* ½ tsp sea salt
* ½ tsp black pepper
* ½ tsp garlic powder
* ½ tsp dried basil
* Olive oil cooking spray

Pasta & Sauce

* Farfalle pasta, enough for 2 servings
* Marinara sauce, your choice (Rao’s recommended)
* Mozzarella cheese, shredded
* Grated Parmesan cheese
* Fresh or dried basil, for garnish

Directions

1. Prepare the redfish:
Debone the redfish fillets and remove the bloodlines. Cut the fish into similar-sized steaks and pat dry with paper towels.
2. Season the fish:
Lightly season all sides of the redfish with salt, black pepper, and garlic powder.
3. Prepare the breading station:
Beat 1 egg with ⅓ cup cold water in a shallow bowl. Place the flour in a separate dish.
In another bowl, combine the Japanese-style bread crumbs with:
* ½ tsp sea salt
* ½ tsp black pepper
* ½ tsp garlic powder
* ½ tsp dried basil
4. Bread the redfish:
Dredge each piece of seasoned redfish in the flour, shaking off the excess. Dip into the egg wash, then coat thoroughly with the seasoned Japanese bread crumbs. Gently press the crumbs onto the fish to create an even coating.
5. Air fry:
Preheat the air fryer to 375 degrees Fahrenheit. Lightly spray both sides of the breaded fish with olive oil cooking spray. Place in the air fryer and cook for 12 minutes, flipping halfway through.
Cook until the breading is golden brown and crispy and the fish is cooked through. (Time may vary by 1-2 minutes depending on the size of the fillets)
6. Cook the pasta:
While the redfish is cooking, prepare the farfalle according to the package directions. Drain and rinse.
7. Warm the marinara:
Warm your favorite marinara sauce. Rao’s works especially well for this recipe.
8. Assemble:
Place a bed of farfalle on each plate and spoon a serving of warm marinara over the pasta. Place the crispy redfish on top.
9. Add the cheese:
Top the redfish with shredded mozzarella. If needed, place the assembled dish in the microwave for approximately 45 seconds, or just until the mozzarella is melted.
10. Finish and serve:
Sprinkle generously with grated Parmesan and garnish with fresh or dried basil.

Serve immediately and enjoy!

The fish may not have cooperated quite like we hoped, but we still managed to put together an inshore slam.

More importantly, we got to spend the day on the water with family, enjoy some beautiful Louisiana scenery, and make memories along the way.

Sometimes it’s not about how many fish hit the deck—it’s about who you’re with and enjoying the time you have on the water.

A beautiful day, good company, and an enough fish for a fish fry…we call that a win!
