Banana Split Fluff

Ingredients:

1 (3.4 ounce) box instant banana pudding
1 (40 ounce) can crushed pineapple in juice, undrained
1 (8 ounce) tub Cool Whip, thawed
3 large ripe bananas, sliced
16 ounces fresh strawberries, hulled and chopped
4 cups mini marshmallows
1 (10 ounce) jar maraschino cherries, drained well, reserve some for topping
½ cup semisweet chocolate chips, plus extra for topping
½ cup chopped peanuts or walnuts, plus extra for topping
Whipped cream, for topping
Sprinkles, for topping

Directions:

In a large mixing bowl, whisk together the instant banana pudding mix and the juice from the crushed pineapple until smooth and thickened.
Fold in the Cool Whip until well incorporated.
Add sliced bananas, chopped strawberries, mini marshmallows, maraschino cherries, chocolate chips, and chopped nuts to the bowl. Gently fold the mixture until everything is well coated with the banana pudding mixture.
Refrigerate the mixture for 2-4 hours to allow the flavors to meld together and the dessert to set.
Before serving, garnish with additional chocolate chips, chopped nuts, maraschino cherries, dollops of whipped cream, and sprinkles.

Avocado, Mozzarella, and Tomato Grilled Cheese😋😍
Ingredients:
4 slices of sourdough bread
1 ripe avocado, sliced
1 large tomato, sliced
8 oz fresh mozzarella cheese, sliced
2 tablespoons butter, softened
Salt and pepper to taste
Fresh basil leaves (optional)
Directions:
Heat a skillet over medium heat.
Butter one side of each slice of sourdough bread.
Place two slices of bread, butter side down, in the skillet.
Layer the mozzarella cheese, avocado slices, and tomato slices on top of the bread in the skillet. Add salt and pepper to taste.
Top with fresh basil leaves if using.
Place the remaining slices of bread on top, butter side up.
Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to help the cheese melt and the sandwich to stick together.
Remove from the skillet, let cool for a minute, then slice and serve.

Cinnamon Roll French Toast Roll-Ups

Ingredients:

1/2 cup + 2 tablespoons unsalted butter, softened
1/4 cup light brown sugar
1 tablespoon cinnamon
8 slices thick, soft bread
2 eggs
1/4 cup milk

Cinnamon Roll Cheesecake Bars

INGREDIENTS
• FOR CRUST:
• 2 cups cinnamon graham crackers finely crushed
• ⅓ cup butter melted
• ¼ cup brown sugar
• FOR CHEESECAKE:
• 2 (8 oz pkgs) cream cheese at room temperature
• ⅔ cup sugar
• 2 eggs
• 1 Tbsp vanilla extract
• ½ cup sour cream
• FOR CINNAMON SWIRL:
• 1 cup brown sugar
• ¼ cup all-purpose flour
• 2-3 Tbsp ground cinnamon depending on how cinnamon-y you want it
• 6 Tbsp butter

INSTRUCTIONS
Preheat oven to 325 degrees F. Line an 8x8 pan with foil, extending the sides of the foil over the edges of the pan. Spray the foil with cooking spray; set aside.
In a medium bowl, stir together the cinnamon graham crumbs, melted butter and brown sugar together until completely moistened. Press the mixture evenly along the bottom of the pan and bake for approx. 10-12 minutes or until golden. Remove from the oven but keep the oven on.
While crust bakes, prepare your cheesecake. In the bowl of a stand mixer, cream together the cream cheese and sugar until fluffy, about 1 minute. Add in the eggs, one at a time, beating well after each addition, followed by the vanilla. Lastly, beat in the sour cream. Set mixture aside.
Meanwhile, in a medium saucepan, melt together the brown sugar, flour, cinnamon and butter, stirring until smooth. Set aside.
Spread half of the cheesecake mixture into the prepared crust. Top with half of the cinnamon mixture. I like to draw lines with the cinnamon mixture into the cheesecake and then swirl them together with a butter knife. Top with remaining cheesecake, then remaining cinnamon mixture, swirling together.
Bake for approx. 35-40 minutes or until cheesecake is set and the center is just a little jiggly. Cool completely, then refrigerate for at least 2 hours before serving.

PREP: 10 min, TOTAL: 50 min, SERVINGS: 9
