Ingredients
Cake Batter
• All-purpose flour – 2 cups
• Baking soda – 1 teaspoon
• Baking powder – ½ teaspoon
• Fine salt – ½ teaspoon
• Ground cinnamon – 1 teaspoon
• Softened unsalted butter – ½ cup
• White granulated sugar – 1 cup
• Large eggs – 2
• Pure vanilla extract – 1 teaspoon
• Ripe bananas, mashed – 3
• Sour cream – ½ cup
• Chopped pecans (optional) – ½ cup
Cream Cheese Frosting
• Softened cream cheese – 8 ounces
• Unsalted butter, softened – ½ cup
• Powdered sugar – 3½ cups
• Vanilla extract – 1 teaspoon
• Heavy cream – 1 tablespoon (if needed for consistency)
Optional Topping
• Fresh banana slices
• Chopped pecans
• Caramel sauce for drizzling
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
2. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a medium bowl.
3. Beat the butter and sugar until light and fluffy. Mix in the eggs one at a time, then stir in the vanilla and mashed bananas.
4. Fold the dry ingredients into the banana mixture, alternating with the sour cream. Stir just until combined, then fold in the pecans if using.
5. Spread the batter evenly into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
6. Beat the cream cheese and butter until smooth. Gradually add the powdered sugar, then mix in the vanilla. Add the heavy cream if needed to achieve a smooth, spreadable frosting.
7. Frost the cooled cake evenly and decorate with banana slices, chopped pecans, and a drizzle of caramel if desired.
This cake is delicious served chilled or at room temperature and stays moist for several days when stored in the refrigerator.
