Ingredienti:

- per 4 persone: 500 G Farina Di Ceci, Olio D'oliva , 1 litro e mezzo di acqua, Sale, Prezzemolo Tritato (facoltativo), alcune Gocce Limone

Sciogliere la farina di ceci in acqua moderatamente salata su fuoco dolce, girando con la paletta di legno sempre nello stesso senso, per ottenere una pasta soffice e priva di grumi. Quando la pasta si stacca dalla pentola va versata negli appositi stampi di legno oleato o sul marmo, dove va spianata all'altezza di circa mezzo centimetro. Appena la pasta raffredda, tagliare a listarelle o quadrati: questi vanno fritti nell'olio bollente o strutto.
Mangiare con il pane appena sfornato, tagliato a metΓ  , con qualche goccia di limone, pepe e sale.
