Giovanni’s Shrimp Truck is a legendary Oahu food truck famous for its garlic shrimp scampi. It has served the dish on the North Shore since 1993.

The meal includes a dozen shell-on shrimp sautéed in rich garlic butter, two scoops of rice, lemon butter, and hot & spicy options. Both Kahuku and Haleiwa locations are open daily. Prices are moderate and cash-only.

The garlic shrimp is known for its intense flavor and big portions. It draws long lines of locals and tourists. Many call it addictively garlicky, with caramelized onions adding depth to the buttery sauce. Peeling the shrimp is messy but rewarding in the casual outdoor seating.

The truck began in a 1953 converted bread truck and is still a Hawaii icon. It has mixed reviews on consistency. A popular copycat recipe uses clarified butter, garlic, and lemon. There’s also an indoor spot in Honolulu’s Kaka‘ako district.
